Don't limit yourself to just boxing; list also wrestling (nix non-Japanese pro wrestling), mixed martial arts (such as Pride Fighting and UFC), kickboxing, and others. List the type of fighting and organization/event if possible.
Here's my list, in no particular order:
Kazushi Sakuraba vs Royce Gracie (Pride 13)
All Frank Shamrock vs Bas Rutten fights (Pancrase)
Frank Shamrock vs Enson Inoue (Vale Tudo Japan 1997)
Frank Shamrock vs Tito Ortiz (UFC 22)
Ken Shamrock vs Dan Severn (UFC 6)
Wanderlei Silva vs Mirko Filipovic (Pride 20)
Genki Sudo vs Brian Lo-A-Njoe (Rings vol. 8; this was the first fight I saw Genki Sudo plant his infamous triangle choke)
Genki Sudo vs Kim Jingwu (K-1; watch how Sudo knocks him out and you'll love this fight as much as me)
Muhammed Ali vs Joe Frazier (Boxing)
Mike Tyson vs James Buster Douglas (Boxing)
Mike Tyson vs Evander Holyfield (the first fight)

sudou genki vs butter bean (k-1)
omg.. soo funny. if any of you have seen jackass the movie, you would know who butter bean is. but anyways, sudou is almost 100kg smaller than butter bean.. and still kicked his ass.
don frye (spell?) vs gerry goodridge (spell?)
well this was goodridges last fight. knocked out frye with one kick.. which was crazy and came out of no where.

AH HAHAHAHA!!! I remember that match like it was yesterday! GENKI SUDO IS THE MAN!!
The Frye vs Goodridge fight kinda surprised me, seeing how Frye handed his ass to him twice in their past match ups. Then Goodridge feeds him feet and Frye hits the canvas in round 1.
I can't believe my main man Sakuraba lost though. It's amazing he actually lasted to a decision considering he hasn't had much time to recover from his last event. Give him a few months rest and put him with opponents that don't actually OUTWEIGH him by 30 lbs, and we'll see him shine again ^^

i was also dissapointed that yoshida lost against gracie.. as did of course, sakurabas. i was suprised how he did not fall. he got a good amount of hits on him and he acted as if it were nothing.

really, that's the only boxing match i ever remembering watching.

Yoshida didn't lose. The match ended in a draw.
And yea, Saku took some good hits from Lil' Nog (that's what we call him at Sherdog.com (http://www.sherdog.com)). If that dude weighed and trained as much as his bro, Sakuraba wouldn't be standing.

Another awesome fight I'd like to add was in Pride: Final Conflict: Antonio Rodrigo Nogueira vs Mirko Filipovic aka "Cro-Cop". Nogueira took an incredibly vicious beating from Cro-Cop and still managed to make it to the 2nd round to tap him out with an armbar. I swear to god I thought that man was made out of steel.

hmm...a couple of Mike Tyson's fight...when he knocked out his opponent within seconds from the 1st round...15seconds!!!....i dont see many fights tho...so i wouldnt be able to list them all...

Must've been McNeely. He lost faster than anyone else I know of (I think under 30 seconds).

ooh yesterday i saw "on the news" This is Blah Blah Live and we are here because of a Robbery say that the Cashier actually faught back to a Fake Gun holding robber but amazingly the Robber Escaped...
Cashier (Blurred Face) : I punched him in the face 5 times then he smacked me with the gun which i knewit might hurt but it was Rubber. so i tried taking off his mask but he Ran away...
Customer - I sawit they were beating the living hell out of eachother haha all i need was a popcorn
